Greek Yogurt Pancakes

Cook Time: 5 minutes
Total Time: 10 minutes
Yield: 3-4 pancakes

Ingredients

1/2 cup oat flour (or gluten free flour blend)
3/4 cup nonfat greek yogurt
1/4 cup almond milk 
1 egg
1 tsp baking powder
1 tsp baking soda

Method

In a bowl, add yogurt and stir until it's smooth and creamy.  Crack an egg over the yogurt and stir to combine. 
Add in the oat flour, baking powder, baking soda and mix together to form a batter. 
Spoon the batter onto a sprayed/greased pan heated to low/medium. Flip the pancakes when they start to bubble a bit on the surface.  Cook until golden brown on both sides.  Makes four big pancakes. I like to add a few chocolate chips to the batter while cooking and top with sliced bananas and a drizzle of agave syrup!
